A few years ago, my husband was diagnosed with Celiac Disease. Soon after, several other family members were also identified as having gluten intolerance.  My many trips to dozens of different grocery stores looking for a good selection of food was very frustrating (which I'm sure many of you reading this already know). One day I thought to myself, how difficult and time consuming it is for anyone with gluten intolerance to deal with obtaining safe and tasty foods on a day-to-day basis.  From that point on, I was determined to figure out how to stock and operate a gluten free grocery store and make it work!
